Soleil de Minuit is a complex blend of 10 different rums.
AOC rums from Martinique and both cane juice and molasses rum from Guadeloupe, so it’s not an Agricole.
A 1710 is aged and blended at the Le Simon distillery in Martinique.
The total aging is between 6 and 20 years for the bottling from 2020 that I review here.
The final aging is made in former cognac barrels which is clearly recognizable during tasting.
The nose is complex, nutty, woody, spicy and fruity.
In mouth and palate it’s still fruity, spicy and woody and I recognize cherry and prunes. Besides this it’s very complex and dry with a clear taste of Cognac.
During the rather long finish it’s still very complex and dry with a clear taste of Cognac but it’s also fruity and I recognize marzipan and hints of olives.
