New local distillery producing a great white rum. Very smooth and mellow to the pallet. Was told when I purchased it that it was being produced by importing sugar cane from Guyana. Curious to know if they add sugar after the fact because it was not overly sweet and went great with a splash of ginger ale. Can't wait the five years for the aged version! It doesn't have great depth because it is young but well worth the purchase.

This is a tough one. It's a young white rum, so it's missing all of the beauty of an aged rum. It smells overwhelmingly of alcohol. But the taste is milder than something like a Bacardi White. Not yet complex, but also not terrible. I had a few sips neat. It wasn't as harsh as many other white rums, but wasn't nearly as smooth as I'd like.
As with most rums that aren't quite ready to be sipped neat, I mixed it. This time, with diet Pepsi. I wish I had a fruit juice to mix with. It was very nice, bringing out a pleasant sweetness that was missing before. I think it would work very well in a daiquiri, or another blended drink.

I'm not sure I'd spend up for this as a mixer. It's very nice (as far as young white rums go), but that's not usually what I want in a rum. I'm looking forward to what they bring as this ages though.
