A friend told me about this rum and then I had some--okay, a lot--at another friend's weekend at the lake. At first I drank it with Coke, then with Sprite, then with Ginger Ale, then with Club Soda. A few things I noticed from that party: (1) This rum is remarkable in how it changes its profile depending on what I mixed it with. Different tastes with each mixer, but all good! (2) Absolutely no hangover the next morning.
I was in Austin, TX in September, so I stopped by the distillery where this is made (Spirit of Texas distillery is in Pflugerville). They gave me a free tour and a tasting. To me, the nose reflects its aging in oak with a bunch of pecans, rather like a bourbon. On my palate, it even seems like a whiskey ... at first. Then it makes this incredible transition and the pecan flavor begins to emerge. I also taste butterscotch, caramel and maple. The finish is full bodied and dry, but not too dry. And, there is no burn.
I had a few cocktails (you've got to try the American Dreamsicle) and then I left with a couple of bottles. I like whisky but used this instead in several holiday drinks and it rocks. My wife used it in several deserts. But I prefer to drink it with Sprite Zero or if I'm feeling fancy, club soda and a couple of squeezes of lime.
Being from and in Texas, i had to try this one. Has a pecan aroma when you pop the top, but not much in the taste. Nice and sweet, on the rocks. I like this one.

I discovered this rum during a surprise tasting at my local "Twin Liquors."
It's absolutely delicious and I've since incorporated it into several of my recipes to infuse the taste of Texas' state tree (the pecan) into my best dishes. While I enjoyed it first in hot chocolate I've introduced it to our pecan pie bars and bananas foster recipes which have become a favorite.
Hats off to The Spirit Of Texas distillery for bringing this rum to our tastebuds!
